INGREDIENTS

8oz

mixed nuts (hazels, brazils or walnuts)

1

clove garlic, crushed

2

medium onions finely chopped

1

teaspoon mixed herbs

1

medium green pepper, finely chopped

8oz

tomatoes, chopped

3oz

wholewheat breadcrumbs

1

egg

 

salt and pepper to taste

 

 

METHOD

1.    Fry onions and peppers for 10 mins
2.    Mix breadcrumbs with garlic and herbs
3.    Stir onion and pepper mix and tomatoes into breadcrumb mix.
4.    Mix well and season to taste
5.    Bind together with the egg.
6.    Pack into cake/loaf tin.  Press in firmly.
7.    Bake in a preheated oven 220ºC / Gas Mk7 for 30 mins.
8.    Serve with sauce of your choice (suggestions: béchamel; cheese; mushroom; peppercorn; etc) or vegetarian gravy
