back Julie's famous slimming tea cakes recipe

Ingredients Instructions

1 Bag mixed fruit

Strong tea

1 Egg

Self raising flour 

Make a pot of really strong tea and pour over the fruit until just covered, leave overnight.
Once the fruit has plumped up add some more cold strong tea and a beaten egg. 

Fold in flour bit by bit until mixture comes together in cake like consistency. 
Line square cake tin, bake at gas mark 4 for half an hour then turn down to gas mark 2 for another half hour, keep checking until skewer comes out clean.

Turn oven out and leave the cake to cool in the oven.
