CARROT CAKE
BEAT TOGETHER
12oz            vegetable oil
12oz            soft brown sugar

ADD
6 eggs (or 5 large eggs) and BEAT
SIFT & ADD
12oz            plain flour
2 tsp         bicarbonate of soda
2 tsp        baking powder
tsp           nutmeg
tsp         cinnamon
Pinch of salt
ADD & MIX
4oz              wholemeal flour
Juice of an orange
Grated orange peel
1lb               grated carrots
2oz              finely chopped walnuts (optional)
4oz              raisins (optional)
POUR into greased tins and bake for 35 mins (approx) at 375F / 190C

FILLING/TOPPING
MIX TOGETHER
6oz             cream cheese (Philadelphia)
6oz             softened butter
12oz            sifted icing sugar
tsp           vanilla essence
This makes a lot of topping - the quantity may be enough
