INGREDIENTS

tablespoon olive oil

1

medium onion, chopped

12oz

broccoli, chopped

1

pint vegetable stock

METHOD
1 Heat oil in pan; fry onion til soft but not brown.
2 Add broccoli and stock
3 Bring to the boil then reduce heat and simmer for 8-10 mins.
4 Remove from heat and allow to cool slightly; liquidise til smooth.
5 Return to pan and reheat.
6 Serve with bread of your choice or cheddar toasts (see below).
CHEDDAR TOASTS

Mix 2oz grated cheddar cheese with 4 teaspoons Dijon mustard.

Spread on slices of French bread baguette.

Grill for 1 minute til bubbling

Serve with the soup.
