back   Boiled Fruit Cake

9 oz margarine
9 oz sugar
18 oz fruit (any combination inc. nuts and cherries)
12 fl oz water
1 tsp bicarbonate of soda

Place all the above in a saucepan over a low heat and bring to the boil.
Turn off heat. Leave to cool
Mixture will rise quickly, so keep an eye on it

Mix together:
7 oz plain flour
7 SR flour
1 tsp mixed spice
pinch of salt

Add this to the fruit mixture
Beat 3 eggs together and add
Cook at 350F for 1 hour
